Milam & Greene Whiskey is made by some of the world’s most experienced whiskey professionals, including CEO, master blender, and author, Heather Greene and 30-year whiskey veteran and master distiller, Marlene Holmes. The Milam & Greene team distills in Blanco, Texas on copper pot stills as well as in Kentucky on classic column stills, using its proprietary yeast recipe and mash bill. Aging takes place in rickhouses located across four states in casks with an assortment of char levels for a variety of flavors resulting in the most thorough array of casks made and collected by any craft distiller. These casks become the ingredients from which its award-winning American whiskey range is batched to create perfection. Milam & Greene Whiskey believes in using the best people and ingredients to create delicious, award-winning whiskey for whiskey lovers.

Milam & Greene Triple Cask Blend of

Straight Bourbon Whiskies - TN, KY & TX (750ml) - $52

Each bottle of Milam & Greene Triple Cask is a batch of three hand-selected straight bourbon whiskies from three different states - Texas Bourbon for a pop of spice, Kentucky Bourbon for vanilla and fruit notes, and vintage Tennessee Bourbon for structure and tannins. The mashbills are 70% corn, 22% malted rye, 8% malted barley for the TX and TN Bourbons, 84% corn, 8% rye, 8% malted barley for the vintage Tennessee. Bottled at a hefty but not overwhelming 94-Proof, this whiskey has a deep golden color, an elegant nose with vanilla, florals and spice followed by a slightly creamy, surprisingly gentle and warm finish. Sip neat, with a rock or in a Triple Cask Old Fashioned with two dashes of Angostura and one dash of orange bitters.

 

Milam & Greene Straight Rye Whiskey

Finished In Port Wine Casks - Indiana (750ml) - $58

Milam & Greene's Indiana Rye whiskey is brought to Texas where it's aged in their warehouses and finished in Port Wine Casks. The Texan sun influences the rate and strength of flavor imparted into the whiskey. Some casks take longer than others. Their team tastes the whiskey regularly until the optimal flavors are achieved. The mash bill consists of 95% Indiana rye and 5% malted barley chiseled down to a muscular but not massive, 94 proof. Deep gold with ruby inflections, the nose reveals cinnamon, cacao and hint of dark dried fruits like black currant, blackberry and fig followed by a rich, warm, leathery finish. Sip neat, with a rock or in a Port Rye Manhattan with Angostura and black walnut bitters.

2021 Heaps Good Wine Company Offshoot Blaufrankisch Rose Pet Nat - Podravje, Slovenia (750ml) - $20

In the region of Stajerska in eastern Slovenia, family-run Heaps Good Wine Company focuses on small-batch single-vineyard, single-varietal, organic wines. Composed of 100% hand-picked Blaufränkisch, the Offshoot Blaufränkisch Rosé Pet Nat is crisp and refreshing with lively bubbles. Bursting with ripe, juicy strawberry and cherry flavors, this Pet Nat is versatile enough to smash any time of year with virtually any type of cuisine. Pairs particularly well with pork and scallion dumplings, chicken sausage or a mild Brebis from the Pyrenees.

2021 Elios Modus Bibendi Grillo Bianco - Sicily, Italy (750ml) - $27.5

Made from the oft-neglected Grillo grape, this expressive and textured white comes from Elios winery’s project to create exciting natural wines from varieties indigenous to Sicily. The grapes are grown organically with some biodynamic interventions and ferment spontaneously in stainless steel. The wine is then aged for seven months on the lees, which adds texture and complexity, resulting in a wine that drinks a bit like an orange despite its lack of skin contact. Expect aromas of lime pith and balsam with a dry, dark palate, medium body, and a mineral finish. Serve alongside heirloom tomato caprese or grilled branzino.

2021 Bodegas Ponce La Casilla Bobal - Manchuela, Castilla-La Mancha, Spain (750ml) - $24

100% Bobal from Castilla that's biodynamically farmed, harvested by hand over multiple passes and whole-cluster fermented using indigenous yeasts in used french oak barrels. Floral aromas, black cherry and a savory, black olive note mark this unusually elegant and complex wine that brings out the best of Bobal while retaining its rusticity. Light to medium bodied with low tannins but dry with firm earthy, minerality on the finish. Great with a chill, this is a perfect pairing for classic Paella from Valencia or a white bean stew from Sevilla.

2021 Vin Des Potes Champ Des Barbiers X Les Po(e)tes - Languedoc, France (750ml) - $26

Vin des Potes is a project by two French somms who work with vignerons located in different countries to release a cuvée with a specific profile, terroir and story. Over the years they have collaborated with 13 vignerons who share the same philosophy - organic or biodynamic vineyards and natural vinification. Les Po(e)tes is a light-bodied and lively blend of 55% Syrah, 25% Cinsault, and 20% Tempranillo that leads with a slight petillance, crisp acidity, and pronounced minerality. Notes of smoke and flint culminate in a firm and dry finish, making for a very tasty and honest natural wine. Drink alongside a roasted root vegetables or a wild rabbit or duck terrine for those so inclined.
