Mai Sentito PetNat is a lean, tight and bubbly blend of 80% Verdicchio and 20% Trebbiano, farmed organically among the vast rolling hills of Marche where the hot Mediterranean sun is tempered by the elevation of 400-550 meters above sea level. It’s pressed into steel tanks to begin fermentation naturally with native yeast and then finished in bottle, trapping the delicate and persistent bubbles. Aromas of lemon pith and jasmine, lead to a bright, zippy palate of fresh stone fruit framed by chalky minerality. A perfect thirst quencher to pair with a summer tomato and cantaloupe salad tossed with a lime mint olive oil dressing as well as to start or end any meal, even alongside a dark chocolate cake for dessert.
