Leopold Brothers distillery is home to eight stills including a rare and unique Three Chamber Still that brothers Todd and Scott painstakingly re-engineered from old manuscripts! They also built Colorado's first distillery malting floor and kiln where they floor malt the highest quality, locally grown grains on site. Their 8 year old cask strength Bourbon has a mash bill of 65% corn, 20% floor malted barley, and 15% rye. Barreled at 100 proof, 8 years of slow evaporation raised it to powerful 110.6 proof at bottling! To offset the heat, they aged it for a few more months in Three Chamber Rye Barrels. The result is a strong but complex and approachable American Bourbon with some oily viscosity, sweet grain, vanilla and maple flavors, with hints of Graham Cracker, dried apricot and orange marmalade. Can be sipped slowly neat but better with a big rock or in an Old Fashioned.
