An early part of the new wave of craft distilling in Chicago, Koval prides itself on using 100% locally sourced grain. Their bourbon is made from 51% corn and 49% millet - an ancient cereal grain - that is aged in charred new American oak barrels. The duet opens with notes 3of mango and vanilla that are followed by a peppery, caramel finish. A great Bourbon to sip on or for a spruced up Old Fashioned.
