Kaiyō, Japanese for ocean, is a whisky made from 100% malted barley and matured in the finest Japanese Mizunara oak casks that must be handmade to work with its delicate grain. After years maturing in their cellars, the whisky-filled casks are sent on a three month sea voyage, rocking on the waves and rolling inside the barrels. Changes in temperature, humidity, turbulence and air pressure combine to influence the whisky so that no two batches are identical. This batch is light and tangy with spicy incense and sandalwood aromas, subtle citrus, vanilla and caramel flavors as well as a distinctly saline note that either real or imagine - Kanpai!
