CloseA commanding member of the A. Americana family, Sierra Negra is a rare and revered, slow-maturing giant that gives life to exquisite mezcals. Its name comes from the dark, serrated edges of its leaves, which stand out in the rugged landscape of San Baltazar. There, in well-drained soils under intense sun, it grows wild, reaching up to 300 kg after more than 25 years. On the nose, it shows a somewhat fruity profile with ripe tropical fruit and salted plum. On the palate it reveals great depth and complexity, baking spices, Thai basil, pink peppercorn with distinct citrus, cinnamon, and mineral notes.
