Another stunning limited edition Mezcal from Grulani, Barril is a wild agave that belongs to the Karwinskii species which also includes Cuixe, Bicuixe, Madrecuixe and Tobasiche. The plants are tall and majestic with thick-foliage. Harvested at 15 years of age, the magueys are cooked in an earthen oven and crushed with a giant, horse-pulled tahona (stone mill), fermented with native yeast over 5 days in open top pine wood vats and then double distilled in a copper still. The aromas and flavors are intense, intriguing and complex with citrus, tropical and floral notes, hints of green pepper and a delightful whiff of toasted banana. Only 350 liters produced in this batch and they don't make Barril every year so it's one of the rarest Mezcals that Grulani produces. Sip neat or with a single rock. Pair with dark chocolate, dried fruits, fresh citrus and fancy salts.
