Dhondt Grellet is definitely one of the coolest, most exciting wineries in Champagne, dating back to 1986 when Eric Dhondt and Edith Grellet decided to stop selling off grapes to negociants and started crafting and bottling their own Champagne. Starting with just two hectares, the domaine has now tripled in size and starting gaining real attention when Adrien took over winemaking in 2012 at age 22. Today, joined by his sister Alice, he has slowly increased the range of Champagnes produced by isolating their holdings across the villages of Cramant and Cuis. Roc Solare is a blend of 90% Chardonnay and 10% Pinot Noir from the prestigious villages of Barbonne Fayel and Fontaine-Denis, averaging 45 years of age, and planted on stony flint rich, silex soils. Comprised of 70% base wine from ’21 and 30% from their perpetual reserve, primary vinification takes place in barrique before spending 2 years in bottle. Disgorgement occurs with a very low dosage of 2.5 grams per liter thus the Extra Brut and Brut Nature designation. Inspired by the great domaines of Burgundy, this stunning Champagne displays aromas of white flowers, ripe stone fruit and a kiss of vanilla, honeysuckle and crème brulée. Crisp, clean and elegant, yet expansive, it pairs perfectly with a great Omakase or every somm’s guilty pleasure - Korean Fried Chicken!
