CloseOui-Non, meaning yes-no, is a co-ferment of Merlot, Chardonnay, Pinot Noir, and Seyval Blanc, an indigenous, non-vinifera varietal, by Barbichette, the natural wine, zero-zero, darling of the Finger Lakes. The Chard and Merlot are macerated together with whole clusters for 10+ days, while later picks of Pinot Noir and Seyval Blanc undergo a two-week maceration. Fermentation occurs spontaneously with native yeast. The juices are then blended and finish fermenting in neutral oak foudres before bottling. On the nose, muddled raspberry and forest bramble lead into a bright, textured palate of fresh cranberry and sour cherry, with a crisp finish. This lively 11% abv wine drinks like a deep rosé orange combo or a light, chillable, funky red with sour notes that pairs beautifully with ramp and dill pesto pasta or roast chicken with salsa verde.
