CloseAfter years of mastering the art of making Sangiovese in Emilia-Romagna, Stefano Zoli left for the Marche where he aspires to “try and create the Chablis of Italy”. He began by buying a single plot of 70+ year old vines rooted in marl and calcareous soils and released his first vintage in 2023 vinifying Verdicchio and Verdicchio only. This stunning white begins with hand picking grapes from 13 year old vines when they are perfectly ripe and letting them speak for themselves in the cellar. About half of the grapes are macerated for up to 10 days on the skins while the other half are direct pressed. The juice then undergoes natural partial-malolactic fermentation and vinification in concrete tanks for 4-5 months. This results in a gorgeous golden hue with aromas of honeysuckle, sea air, citrus and tropical fruit coupled with beautifully textured flavors of honeydew, papaya, finger lime, lemon, and saline. Pairs deliciously with Trout Almondine or crispy green beans with garlic.
