‘Pomalo’ in Croatian means ‘to take it easy, to relax, no stress, no worries’ which speaks directly to how each and every one of the wines produced by the Begović cousins are made and enjoyed. This delightfully refreshing pet nat comes from multiple organically farmed vineyards from inland Dalmatia at elevations of 50-300m above sea level. Made from the indigenous Plavina varietal, grown on red and brown topsoil mixed with brown clay and limestone, the grapes are hand harvested, de-stemmed and direct pressed into stainless steel where they undergo spontaneous fermentation. Before fermentation is finished, the wine is bottled and left on the lees for 6 months trapping the CO2 and producing a PetNat or Methode Ancestrale sparkling wine with a rough disgorgement and no added sulfur. Hazy ruby red hues fill the glass alongside aromas of red berries, plum, and pink grapefruit with savory flavors of sour cherry, guava and blood orange with refreshing, balanced acidity. Pairs delectably with a fried shrimp po’ boy or grilled vegetable and mushroom skewers with an herb vinaigrette.
