CloseLestignac is an ancient winery dating back to 1617 that had been abandoned for some time and re-established in 2009 by the young couple Mathias and Camille Marquet who farm biodynamically and cultivate healthy soils. Pagaille literally translates to ’paddle’ but we think that in this instance it means ‘up blank’s creek without one. It’s a wild, coferment of 50% Cab Franc, 20% Malbec, 15% Sauvignon Blanc and 15% Muscatel from a small, 2 hectare vineyard of 50 year old vines planted on clay and limestone soils near the village of Sigoulès. After a short five day maceration, it’s fermented naturally with indigenous yeast and minimal sulfur in concrete vessels. The result is a fresh, delicious, medium to light bodied red with flavors of ripe, wild berries, a touch of white pepper and a little earthiness that’s low in tannin but high in acidity. This quaffable, chillable red pairs well with burgers, wings and Pad Thai!
