CloseIn 2016, after 10 years at the family winery, Marcell Bukolyi, along with his wife Lillia, purchased their first tract of land and launched their own winery. They live directly next to the winery and handle the entire winemaking process themselves, from the cultivation of their vineyards to the bottling and labeling of the wines, and are the only fully certified organic winery in Eger. Köves is a stunningly precise, chiseled blend of 50% Hárslevelű, 30% Riesling, 20% Furmint from a single vineyard with limestone and chalky soils on the Nagy-Eged hill. Spontaneous fermentation and aging take place in stainless steel (85%) and 500 L Hungarian oak (15%) casks for six months before blending and bottling without fining or filtration and minimal sulfur. It’s medium-bodied, tangy, and spicy, with aromas of apple orchard and orange blossom that lead to a crisp palate of fresh apricot and mandarin with herbal tea, saline and mineral notes. Pairs perfectly with strong seafood like scallops or mackerel as well as an array of cheeses.
