CloseThalia Tatari, the winemaker at Sclavos, one of the the first biodynamic wineries in Greece, is part of a new generation shaping the future of Greek wine with a deep respect for traditional vinification and nature. The grapes for Alchymiste are sourced from vineyards on the Paliki Peninsula of Cephalonia known for its calcareous soils and Mediterranean sea breezes that are play a key role in this zippy, mineral-driven white that's comprised of 50% Roditis and 50% a field blend of native varieties Moschatela, Tsaousi, Robola, Zakynthino, and Vostilidi. Spontaneously fermented with indigenous yeast after a short maceration on the skins, it is then aged on lees for four months in stainless steel. The result is a medium bodied, intense, dry white with distinct aromas of white flowers and lemon zest coupled with flavors of green apple, marzipan, hints of rosemary and sage with a clean, balanced acidity and a lengthy orchard fruit finish and a characteristic Mediterranean salinity. Pairs well with grilled sardines, peppers stuffed with Haloumi, or crudite with Tzatziki.
