ClosePheasant’s Tears enjoys a devoted, cult-like following while pioneering the revival of Georgia’s ancient winemaking tradition which dates back about 8000 years and has a legitimate claim to being the actual birthplace of wine. This skin contact orange is made from 100% Kisi, an indigenous varietal from high altitude vineyards in Khaketi that are farmed organically and vinified naturally. Whole clusters are gently crushed then macerated and fermented on the skins for 6 months in Qvevri, the traditional clay vessels that are buried underground. They are then racked into another Qvevri for an additional year providing slow, deliberate oxidation. Tropical and tangy stonefruit aromatics and flavors are laced with hints of citrus peel, acacia and a nutty, savory, slightly tannic finish. It’s a perfect match for Georgia’s versatile cuisine which is influenced by Eastern Europe, the Middle East and the Southern Caucasus but pairs particularly well with lamb stew or pita dipped in labneh.
