CloseIn the Kaiserstuhl village of Baden, just across the Rhine River from the Southern Alsace towns of Colmar and Riquewihr, Holger Koch makes rustic, traditional wines in a style he calls ‘grandpa chic’ which is essentially a natural wine the way they used to be made before technology intervened. Practicing organic on loess soils, he coaxes perfect ripeness from this 100% Pinot Noir that’s fermented with indigenous yeast in 3000 liter wooden casks where the wine rests for 9 months before bottling without fining or filtration. It’s a pure, cool climate Pinot with fresh, cherry and raspberry flavors, delicate florals, brisk acidity, moderate tannins and some earthy minerality. Light-bodied and restrained in a Burgundian-style, this Spätburgunder pairs well with roast chicken or duck as well a cheese platter or generally lighter fare.
