CloseOld friends Giovanni and Simone launched Fora in the Colli Berici hills just south of Vicenza, making ‘out there’ wines. In the local dialect, Fora translates to ‘out’ as in ‘you’re out of your mind.’ Bidon Bidon is their semi-sparkling, frizzante rosato comprised of about 85% Tai Rosso, a variation of Grenache, and 15% Garganega, the varietal in Soave, both native to the region and the only two grapes that Fora plants. Fermentation takes place with indigenous yeast followed by elevage in stainless steel tank for eight months. The result is a light, crisp, almost tart, fizzy rosé with white pepper, ruby red grapefruit, lychee and wild berry flavors that finishes with just a hint of tannin and minerality. Super interesting yet unmistakably pleasurable, we recommended this alongside a square Bufala pizza from Impasto with San Marzano tomatoes or a Mediterranean Chickpea Salad.
