CloseThe Fongoli estate, located in the heart of Montefalco, Umbria, has been a cornerstone of the region’s wine heritage since the early 1900s, when Decio Fongoli transformed a collection of traditional farms into a biodynamic vineyard. This old vine blend of 85% Trebbiano Spoletino and 15% Grechetto is planted on heavy clay soils rich in limestone. Grapes are hand-harvested before being destemmed and co-fermented spontaneously with no added sulfur in open-topped vats without temperature control. They are then macerated with the skins for two days followed by pressing and continued fermentation to dryness and three months of aging on the lees in steel tanks, with occasional rackings. The result is a bright, white wine with texture and layers of citrus oil, wild herbs, and orchard fruit, carried by a saline minerality and subtle tannins. Pairs wonderfully with fried calamari, a loaded baked potato, or Camembert.
