In 2006, Fabien Jouves took over his family's 44 acre estate located in the southwest of France high in the hills surrounding the village of Trepoux-Rassiel, just to the west of Cahors. He farms biodynamically, creating a balanced ecosystem in the vineyard with horse-plowing, bees, grains, and pigs! This traditional Gascon blend of Gros Manseng, Ugni Blanc and Muscat d’Alexandrie is destemmed before undergoing spontaneous fermentation followed by an extended 90 day skin contact maceration in stainless steel. Aging takes place in both stainless steel and neutral oak. This is a lively, medium-bodied wine with balanced acidity, pithy citrus and stone fruit flavors as well as a bit of funkiness, a slight prickle and a dash of dry, bitter tannin. A great match for vegetable biryani or a sheep milk cheese like the local Amou, or Petit Basque which is easier to find. But if you really want to go local, try it with fingerling potatoes sauteed in duck or goose fat as this is the rare part of France that favors neither butter nor olive oil.
