CloseRaised in a family of shepherds, artisanal bakers and olive oil producers, Yotam Ben Zvi learned his craft at Golan Heights Winery before launching Ein Teina in 2004. This 100% Roussanne, a noble white grape originally from the prestigious Rhone Valley appellations or Hermitage and Chateauneuf-du-Pape, is from a few select vineyards in the Upper Galilee. The grapes are hand- harvested in two passes. The first when the grapes are a touch underripe, imparting higher acidity, lighter body and lower alcohol. The 2nd, when they’re fully ripe, adds body, flavor and viscosity. After fermentation, the wine rests sur lie with bâtonnage, adding texture and depth. The result is a vibrant yet layered white with notes of Meyer lemon, ripe peach, white flowers and warm brioche, finishing with a stony, mineral edge. Pair with butternut squash and sage ravioli with brown butter, chicken tagine, or anything with spice and richness that welcomes freshness.
