CloseVincent Roussely is the fourth generation of his family to make wine at this beautiful 8 hectare vineyard in the heart of Chenonceaux on the Cher River. Biodynamically farmed and Demeter certified, this 100% Sauvignon Blanc spends 3 weeks on its skins and ferments spontaneously in stainless steel tanks that are built into the walls of the 250 year old tufa limestone tunnels beneath the winery where the temperature is constant and the conditions ideal. The result is a textbook orange wine - clean, crisp, and precise, medium-to-light- bodied, with floral aromas, fresh stone fruit flavors and a dash of bitters on the mildly tannic, dry finish. Pairs well with tinned fish like sardines and mackerel or seafood rillettes and terrines from Belle-Ile, 38 nautical miles west of Saint Nazaire at the mouth of the Loire.
