CloseDr. Ulli Stein has been described as an eccentric and occupies an . Ulli’s Riesling is grown on the steep, slate slopes of Mosel. The organic grapes are hand-harvested from old, ungrafted vines and pneumatically pressed. The juice is gently gravity fed to settle and spontaneously fermented in traditional 1000L old oak casks. A touch of SO2 is added, the wine is filtered using diatomaceous earth after 3-12 months on the lees, and the wine is bottled without fining. The nose is filled with pear, lemon pith, and white peach. This bone-dry Riesling is as refreshing as the mountain air with notable minerality and tantalizingly acidity. Its electric palate boasts notes of green apple skin, ripe pear, and wet stone. Pair with Oysters Rockefeller or charred cabbage with harissa butter.
