Sete is a Central Italian winemaking collective focused on recovering abandoned vineyards in the region. Their ‘Chupa Cabra’ collaboration with importer, Giovanni Pagano, yielded this spunky orange made from Trebbiano blended with a small amount of Malvasia. The grapes undergo native yeast fermentation and a week of skin contact in fiberglass. The wine is bottled without fining, filtration, or the addition of sulfur. The nose previews the medley of exotic fruit, flowers, and funk to come. Striking acidity and gentle spritz play on the palate with notes of blood orange, apricot, white flower, and a touch of spice. Pair with Baja shrimp tacos or lemon-pepper tofu topped with apricot-chickpea salsa.
