CloseRémi Sédès, a self-proclaimed Bohemian, went from accordionist to agriculturist and now tends his small parcels with the help of Shire horses. 100% Gamay that’s farmed organically, harvested by hand, fermented spontaneously with native yeasts, aged in old oak, and bottled without fining, filtration or any added sulfur. Wafting aromas of ripe red berries, delicate rose petals, and fresh herbs emerge from the glass. Light-bodied with moderate zippy acidity, the palate consists of citrus peel, blood orange, wild herbs, and stunning saline-driven minerality. In short, Sédès’s Gamay drinks somewhere between a rose and an orange. Pair with blackened salmon or kimchi and gruyere rice fritters.
