this 100% Sauvignon Blanc very early in the season to maintain its crisp acidity and to keep the
alcohol and body in check. Cultivated in the Negev Desert’s Nizzana Vineyard, the vines endure
scorching days and cool nights. With only about 2-4” of rainfall per year, the arid climate keeps
diseases to a minimum and virtually eliminates the need for any type of herbicide, pesticide or
any human intervention other than some fences to keep hungry, marauding camels away. The
nose delivers an enticing bouquet of tropical fruit and tangerine, intertwined with orange
blossom. On the palate, refreshing grapefruit and passionfruit flavors drive the clean, crisp
mineral laden finish. Kosher for Passover but not Mevushal, it pairs perfectly with grilled salmon
or a Thai Green Papaya salad.
NB: 2022 was a 'Shmita' or sabbatical year, which occurs every seventh year, as mandated by Jewish law. During a Shmita year, the land is to lie fallow and not be cultivated.
