This is a beautiful, crisp, medium-bodied wine made from 100% Debit, one of Croatia’s predominant indigenous varietals for white wines. It is from vineyards that see some of the warmer temperatures in Northern and Central Dalmatia, yet the cooler nights and constant breezes contribute to its acidity. Farming is organic, no irrigation. The wine is racked and left on the lees for five months. The result of Pomalo’s minimal intervention approach, in the vineyards and the cellar, is a refreshing, briny wine that pairs well with mussels, or an oven roasted mackerel with fresh herbs and lemon.
