ClosePoliphonia is a field blend from the Tibaani village of over 150 indigenous grapes that were given to Pheasant’s Tears by Georgia’s Ministry of Agriculture to help preserve and research indigenous grape varieties. So far, they’ve identified 117 of them and are working on the remaining 40 or so!!! The result is a beautifully complex, intriguing yet delicious wine that defies categorization though we'll call it rosé. The grapes are direct pressed into qvevri, where fermentation takes place with indigenous yeast and the wine rests for six months before racking into stainless steel for another year. The final product expresses notes of mandarin, ripe stonefruit, wild herbs, earthy minerality, and tea-like tannins with a long savory finish. Pairs beautifully with crispy, grilled prawns or a Kalamata tapenade dip.
