CloseLightwell Survey is a winery on the cutting edge of Virginia's up and coming wine making scene. Fully embracing the use of hybrid (or non-vinifera) varietals, they source their grapes from a handful of organic vineyards dotted along the Shenandoah Valley. An illustration of this philosophy, Colorwave is made from two vinifera varietals: 44% Vidal Blanc and 33% Petit Manseng, and two hybrids: 19% Chambourcin, and 4% Traminette. The grapes are fermented with indigenous yeast with varying time on the skins ranging between two days and three weeks. Somewhere between an orange and a rosé, the nose expresses ripe stone fruit and honeysuckle while the palate offers grapefruit pith, dried raspberry, tart red apple, and orange spice. With jagged tannins and a balanced acidity, pair this unique bottle with a fragrant and spicy Doro Wat (Ethiopian chicken stew), or for a Mediterranean breakfast-for-dinner, with Shakshuka.
