Like all the wines at Sablonnettes, Menard is a hard-core natural wine with indigenous yeast, no fining or filtration and minimal sulfur at bottling. However, there are some even more unique features to this wine. It’s hand harvested and layered by variety in whole bunches. First the Gamay goes into the bottom of the tank, then one week later the Grolleau, then one more week and the Cabernet Franc is added in this twist on carbonic maceration. The result is a light bodied, delicious red that’s low in tannin with a bit of funk and a very slight, lively fizz. With notes of heirloom tomatoes, herbaceousness and a peppery finish, this pairs well with a goat cheese salad or a decadent grilled cheese and avocado sandwich
