This white wine is a mix of Carricante (60%), Grecanico, Catarratto, and Minnella. The grapes are hand harvested the second half of September and brought intact to the cellar, where whole clusters are soft pressed. Fermented at 20 degrees in steel tanks, then aged for about 6 months in the same steel tanks. The soil is sandy, volcanic, and rich in minerals. It features lots of rocky minerality, a little white stone fruit, high acidity and a medium light body that veers towards the lighter side. Overall this wine is restrained and balanced, and pairs well with brown-buttered roasted oysters.
