Cala Bianco is Dario from Mortellito’s spin on the white grapes from the northwest of Sicily. He uses a specific clone of Catarratto, called Catarratto Extra Lucido- meaning ‘Extra Shiny,  which adds texture, depth, and color.  With a short, 50 hour maceration on the skins, it is firmly on the cusp between an orange and a white with decidedly gentle tannins. With delicious fresh melon flavors on the palate, a zesty and woodsy finish, Cala Bianco pairs wonderfully with crispy citrusy salmon alongside rosemary roasted fingerling potatoes.
