CloseForge Cellars is made up of friends with a common goal: to grow grapes and handcraft wines of interest and value that perfectly balance minerality, aromatics and fruit to reflect the exceptional terroir of southeast Seneca Lake in upstate NY. While most of Forge’s vineyards lie along the slopes of the hillsides, Caywood East is situated at the crest where it’s a little cooler and the gentle breezes provide perfect conditions for ripening the berries while maintaining crisp acidity. Fermented spontaneously in neutral barrels, it intense and focused, it’s medium-bodied and bone dry with fresh peach and anjou pear flavors, a hint of honey, fennel, white tea and a touch of petrol (think new bicycle tires) which is a telltale sign of the varietal. Only 384 cases total! Pairs perfectly with sushi, sashimi and ceviche but also works with spicy Thai and Sichuan cuisine.
