CloseIn 2021 the Costanzo Family began a painstaking renovation of the dormant 19th century Palmento Winery and cellar, bringing it back to its original form and function. Farmed organically from their 12 hectares of vines up to 800 meters in altitude in the Santo Spirito Cru, this Etna Rosso blend of 80% Nerello Mascalese and 20% Nerello Cappuccio is intense with a bright freshness and soft tannins. The grapes are pressed softly using the ancient winery's original millstone: the juice is gravity-fed to fermentation tanks where more modern techniques are employed. 50% of the wine is aged 12 months in stainless steel tanks while the remaining 50% undergoes full malolactic fermentation in oak barrels, also for 12 months. Once blended, it sees another 12 months in bottle. Pairs beautifully with a Sicilian Caponata or a tin of Sardines and crostini.
