Roberto Di Filippo and Roberto Pieroni of La Sapata are working to preserve Romania’s ancient winemaking traditions while respectfully cultivating the land. Located in the Danube River Delta, the vineyards are tended by a shrinking local workforce, along with some help from plow horses. This fresh, lively Pét-Nat is made from the native Romanian Feteasca Regala varietal.  The grapes are pressed, and fermented with native yeast before undergoing a second fermentation in the bottle with no disgorgement, trapping frothy bubbles and sediment behind the crown cap. On the nose, bright orange zest and wildflowers are accented by a yeasty note. On the palate, it’s crisp and dry with juicy mandarin and peach flavors, limestone minerality and delightfully bubbly. Pair with a grilled halloumi salad or shrimp pilaf.
