The Jousset’s fundamental and profound respect for nature led them to practice biodynamic and organic certification. Rose á Lies is a stunning PetNat blend of 50% Gamay from 60 yr old vines and 50% Grolleau from 80yr old vines from a tiny single hectare parcel so total production is a mere 400 cases. It’s harvested by hand, direct pressed, gravity fed, and partially fermented with indigenous yeast in old oak barrels. Natural re-fermentation occurs in the bottle followed by disgorgement and then topping off from other bottles. Fresh, fizzy and vibrant, with balanced acidity and a bouquet of clean, pure wild berries on the nose and palate, this transcendent bubbly pairs perfectly with seafood terrines, mousses and rillettes with a warm, fresh baguette.
