CloseDaniel Boulle, fourth generation at the helm of Les Aphillanthes, made the switch to organic– and later biodynamic– in 2007. Keeping only the finest 20% of their yield and selling the rest, Daniel and his wife Hélène harvest Grenache, Syrah, and Mourvèdre from three separate parcels. The grapes are pressed into concrete tanks where they undergo fermentation with indigenous yeast. An expression of tradition through contemporary methods, this wine is full bodied, backed by ripe, round tannins and balanced acidity. It opens with fresh forest fruit flavors that evolve into notes of pomegranate and dark plum, balanced by an herbal, mineral, earthy finish. Pair with roasted duck breast in green-peppercorn sauce or a platter of fragrant Rhone-valley cheeses such as Beaufort, Abondance, or Reblochon.
