Céline Jacquet is a young producer working on the steep slopes of the Alps in the Village of Arbin in the Savoie region. She farms about 12 acres of grapes organically and completely manually, as the slopes won’t allow for any machinery. Her rosé is made from Mondeuse that is fermented in whole clusters with ambient yeast, and aged in stainless steel. It’s light and fresh, with a juicy ripe nose and an herbaceous zesty palate. Perfect to sip with a mountainous view somewhere in the Alpine… or for the less adventurous, try it alongside Farfalle with smoked trout and peas in lemony creme fraiche sauce.
