Benoît Brazilier is a seventh generation winemaker honoring his family vines of “Thoré-la-Rochette” with organic stewardship. The grapes are harvested at optimal maturity and vinified via traditional methods. On the nose, the zing of citrus and fresh white peach is complemented by the seductive aromas of white flowers and honeysuckle. The palate is just as lively with moderate acidity calling to mind lime, stone fruit and hints of limestone with a very subtle petillance. Pair with a bowl of creamy lobster bisque or a spring pea shoot salad with goat cheese.
