CloseDuring the pandemic, Field Recordings sourced pomace from various wineries over Paso Robles to deliver a pét-nat pick-me-up and aid to local restaurants in the area, with all their profits from the project going to the Independent Restaurant Coalition. This community cuvée combines approximately equal parts Syrah, Grenache, Mourvèdre, Barbera, Cabernet Sauvignon, Petit Sirah, and Albariño. The pomace is steeped for 3 to 7 days and pressed before spontaneous fermentation then blended with Albarino wine, thus the ’normal’ 12% abv. The wine is bottled without fining, filtration, or sulfur. The nose is floral with a hint of the funk to come on the palate. Refreshingly dry with a fine fizz, notes of assorted fruit preserves, candied raspberry, and tart red cherry find an earthy balance with lavender, rosewater, sage, and barnyardy funk. Pair with pizza topped with fig and prosciutto or pack with picnic sandwiches.
