The sister Orange to Elios’ Modus Bibendi Macerato, the Katamacerato is leaner and darker with higher tannins. This wine is made from the thick skinned Catarratto grape and sees seven days of skin contact with ambient yeast fermentation before seven months aging in stainless steel. It’s deep and structured with notes of sandalwood, baking spice, and ripe citrus. Perfect alongside an aged pecorino or pasta with sardines and fennel.
