Santi Solane is a blend of 80% Corvina and 20% Rondinella, made in the Ripasso style in which the pomace from their Amarone is added to the vats of fresh Valpolicella. This triggers a second fermentation which adds additional layers of complexity, dried fruit, structure and earthy, tobacco notes. The vats are then blended and aged for more 3-5 months in small oak casks followed by an additional 12 months in larger neutral casks prior to bottling. The result is a medium-to-full bodied red that combines the freshness of Valpolicella with the richness and complexity of Amarone. Pairs well with pork chops or porcini mushroom risotto.
