CloseSituated on granitic soil about 2 kilometers from the Bio Bio River along the Cordillera de Nahuelbuta (Chile’s coastal range called Cougar ́s land or Tierra de Pumas), this 100% Pais comes from 250 year old vines that are dry-farmed following organic and biodynamic principles. The grapes are harvested manually, de-stemmed and fermented spontaneously in lagares (wood open top tanks) with about 1-3 punch downs per day to extract some tannin, flavor and color. The wine is then aged for 11 months in 90% concrete and 10% old wood barrels. Medium-bodied with balanced tannins and acidity, the aromas and palate reveal wild, brambly red and black berries with a strong herbal and mineral undertone. Pairs perfectly with Chilean Parillada with a side of corn on the cob and Patatas Bravas, boiled then gently fried to golden brown perfection!
