The title of this wine refers to its vigneron, Raphaël Marchal, a member of Christian Binner’s local collective: Les Vins Pirouettes. This intense and exotic white is a blend of 85% Gewurztraminer and 15% Riesling, that’s organically grown, harvested by hand, and fermented with indigenous yeast in wooden vats. The pungent nose delights with ripe yellow fruit, lychee, rose petals and orange peel with a distinct honey note. Structured by piquant acidity, the palate is lively and medium-bodied with ripe melon, Bosc pear and tangy citrus flavors. Pair with spicy Gochujang-glazed fried chicken or shakshuka.
