CloseErpacrife was launched by four friends who studied Oenology together in Alba during the late '90's. Their goal was to create a unique, world class Methode Champenoise sparkling wine from native Piemontese varietals. After much experimentation, they settled on Nebbiolo for their rosé which is barely pink and drinks more like a Blanc de Noirs. Grown in calcareous marl soils about 400m above sea level, the grapes are harvested prior to full maturity for higher acidity and less fruitiness. They are gently pressed, macerated for 12-18 hours and pressed again into neutral oak where the juice ferments and rests for three months with occasional battonage. The second fermentation in bottle takes place the following spring where the wine rests for 24 months, trapping the CO2 and in contact with the lees prior to disgorgement. The result is a gorgeous golden-hued sparkler with a slightly pink tinge that reveals subtle aromas of fresh berries and brioche followed by crisp lemon, stony minerality with a hint of berry and baking spice on the palate. Pairs splendidly with Tagliolini al Tartufo Nero or a Ligurian Crudo di Mare.
