This traditional domaine is born from the marriage of  Vincent Bitouzet and Annie Prieur, both of whom represent dynasties of  Burgundian winemaking. They continue their legacies today, practicing organic winemaking with their son François. This classic, medium-bodied Chardonnay is hand picked from fifty year old vines in the lieu dit, Les Corbins. The process begins with native yeast fermentation with extended lees contact and ends in French barrique, of which 20% are new.  Aromas of white flowers, pineapple and spice segue into a generous palate with some buttery notes that gracefully balance its underlying minerality and acidic backbone. Notes of citrus zest, pineapple, toasted almond, and oak glide through the palate to a dry, slightly tangy, honeysuckle finish. Pair with brown butter scallops served over parmesan risotto or pork loin stuffed with mushroom, spinach, and gruyere.
