Having met studying Oenology in the neighboring village of Lednice, Jakub Herzán and his girlfriend Sandra, along with his sister Zuzana, took over the Herzán family vineyard in 2013. The trio are strong believers in biodynamic practices, and take a minimal intervention approach to winemaking, harvesting grapes by hand and bottling without filtration or the addition of sulfur. Their Dornfelder sees the grapes ferment as whole berries in open-topped tanks for 2 months before aging for 10 months in older French oak barrels. A variety known for its dark color and rich fruit & earth notes, this wine is medium-bodied and chock full of blackberry, cooked plums, and warm baking spices. Enjoy with a hearty meal, such as lamb moussaka or roasted winter squash & mushrooms.
