CloseEnvironmentalist André Joffman purchased the Jayer-Gilles Estate with the aim of making pure wines. This balanced, elegant Cuvée is the product of hand-harvested, organic Pinot Noir from the fifty year old vines of “Les Chasserot”. It is only bottled in years when the aromatic profile is exceptional. The grapes are 100% destemmed and put in vats for a period between 20 and 25 days with alternating punching and pumping over. They are racked, pressed, and settled. Malolactic fermentation results in voluminous presence in the middle of the palate. The wine ages for 18 to 20 months before a single racking and is bottled without filtration. All of this culminates into a delightful medium bodied wine with crisp notes of ripe red forest berries and a dry chalky minerality that gathers before a long, smooth finish. Pair with a juniper-rubbed roast duck or a handmade tomato galette.
