ClosePinard et Filles is a small, husband and wife winemaking team located on the western shore of Lake Memphremagog, specializing in cold-hardy, non-vinifera hybrids that are better suited to Quebec’s challenging climate and allow to practice minimal intervention, natural winemaking. Honey Moon is a blend of equal parts Frontenac, Frontenac Gris and Frontenac Noir that undergo a whole cluster, natural, semi-carbonic fermentation and are then blended with 120 day skin-maceration La Crescent. The result is a playful, beguiling, lighter bodied, low tannin red that's rosé and orange adjacent. Aromatic notes of violet and sage lead to a tart, almost puckery palate of green grape, cranberry and pomegranate flavors with a lovely, sour kombucha note on the finish. Serve chilled and pair with a local farmstead goats milk cheese, seared venison with parsnips and acorn squash, or a tofu katsu curry.
