ClosePertois-Moriset, situated in the prestigious village of Le Mesnil-sur-Oger, was founded in 1951 after the marriage of Yves Pertois and Janine Moriset, scions of two ancient Champagne families. Currently run by their granddaughter Cécile and her husband Vincent who have expanded their holding with the acquisition of prized parcels, including 1.62 hectares in Chouilly, a Grand Cru vineyard in the Côte de Blancs planted entirely with Chardonnay and farmed sustainably with natural winter grass cover, seasonal plowing and gentle crop protection. Harvested by hand, it’s fermented in 78% stainless and 22% neutral barrels then spends 48 months on the less in bottle prior to disgorgement and an extremely low dosage of 1.5 grams per liter, thus extra-brut. It’s crisp, clean and compelling with fresh stonefruit flavors, fine, persistent bubbles and a hint of brioche. Fewer than 320 cases were made. Pairs perfectly with a raw seafood tower, caviar and crème fraiche, or any dessert with chocolate or berries!
