With Field Recordings, winemaker Andrew Jones has turned his attention to underrepresented and underappreciated growing sites, making both single-vineyard cuvées and eclectic blends that express the varied terroir of California’s Central Coast. Salad Days is a delightfully drinkable, lower-ABV Pet Nat made from organically grown Chardonnay, Chenin Blanc, and Colombard. Brightly acidic and enticingly crisp, with persistent bubbles and just a hint of kombucha funkiness, Salad Days is fantastic as an aperitif, at a picnic featuring creamy chèvre on crusty bread, or fried clams with lemon and tartar sauce.
